Grey Snowy Island

A grey and snowy island = ultimate relaxation

We all spent the majority of the day on the couch in front of the fire, but we ventured out just before cocktail hour for a little exercise.

The snow and wind intensified on our walk and we barely lasted 30 minutes.

I warmed up quickly with a home-brewed imperial pumpkin once we got back. Mmmmm.

I switched to wine for dinner…

We enjoyed all of the food that had been planned for Christmas dinner, except for the ham.

Everything was fabulous, especially Karen’s sun-dried tomato pesto.

And, my mom’s brandied sweet potatoes are one of my favorite foods of all time.

Dessert was spanish white wine and Matt’s mom’s pumpkin pie. Delish times five.

This morning I spent some time at the gym at the Bald Head Island club and then Kanz helped me tackle a baking project I was supposed to make a few days ago: Lauren’s pumpkin pie chocolate cups!

My mom had gotten me a couple of bags of the soy-free chocolate chips I love so much, so I used those instead of white chocolate to make the cups. We also only had the jumbo foil cupcake liners, so I made about 6 huge cups instead of ten mini’s.

(He got smashed when I cut into him). They were not the most beautiful cups, but they sure taste good:)

Now, I’m back to reading and relaxing on another cold and blustery island day.
